Cristian Hernández is a MSc student of Food Science and Technology at School of Chemistry at Autonomous University of Coahuila, that belongs to the Group of Bioprocesses and Bioproducts. He is an Engineer in Food Science and Technology from the Autonomous University Agrarian Antonio Narro, and has obtained different recognitions and participations with the project “Harvesting the rambutan peel in Mexico, with the RIIIT 2015 Award. Cristian has published 2 articles in an indexed scientific journal and has participated in 4 national and international conferences.
Currently, Cristian works with rambutan peel (Nephelium lappaceum L.) exotic fruit native to Southeast Asia and currently cultivated in Mexico. investigates the nutritional and functional properties. In his current research he is dedicated to the extraction of phytochemical compounds that exhibit antioxidant, antimicrobial, antidiabetic, antiviral, anti-inflammatory, anti-hypoglycaemic and antiproliferative effects to develop his process at an industrial level as a functional or nutraceutical product.
