José Carlos is a Master student of Food Science and Technology at School of Chemistry of the Autonomus University of Coahuila. Is Pharmacobiologist Chemist (2018) graduated with honors at the Autonomus University of Coahuila. José Carlos is member of the group since 2016, where he developed his bachelor’s thesis project and has participated in one national congress.

José Carlos worked with the extraction by solid-state fermentation of polyphenolic compounds of Purshia plicata and tested its antioxidant activity and antiproliferative activity against cancer cells. Now is working in the extraction of the enzymes that are responsible of the biotransformation of ellagitannins of Rambutan (Nephelium lappaceum) husk.

José Carlos has experience in extraction of bioactive compounds by solid-state fermentation and evaluation of biological activities.
